Galopiau de volaille à la sauce Pédauque

The meaning of this is obscure. "Galopiau" is not in the dictionary, but "galopiau de volaille" may be escalope of poultry. The name of the sauce seems to be a reference to an early mediaeval queen of Toulouse who, according to legend, had webbed toes like a goose or duck - possibly another reference to poultry.
